During Maslenitsa, a sun festival that is celebrated at the end of February, also known as ‘pancake week’, the traditional Russian festivity, where blini (pancakes) are eaten every day for the seven days of the festivities. The blinis are eaten with many fillings and toppings, from sour cream to caviar, to salmon and all things sweet! The blinis, made every day of the week, symbolise the sun and its warmth and Russians are known to eat as many of them as possible during Maslenitsa since the seven days of festivities are followed by seven sober weeks of the Great Lent.
